3 ingredient pancakes

These are super simple and literally require only 3 ingredients. I chose to add a little cinnamon, feel free to add your own spices too! There are just a million different things you can do to change these up. These are totally Paleo, Vegetarian and GAPs diet friendly. If you have allergy to nuts try using coconut butter if you are not allergic to coconut!

Ingredients:

2 eggs (I use free-range organic)

2 tbsp nut butter (I used almond butter in this recipe)

1 small apple (I used an organic Pink Lady apple, choose whichever you like or try a ripe banana, cooked squash, etc! The possibilities are endless)

A sprinkle of cinnamon (optional)

Oil or butter for pan frying (I used Grass-fed butter)

Method: 

Put the apple into your food processor and turn it into a mash. I used the peel too here (lots of fiber). Then add it to your eggs and nut butter and either hand mix or use your electric mixer until all the ingredients are blended nicely. Add your cinnamon here and give one final stir.

Heat up the oil or butter in a pan on medium and use a 1/4 measuring cup to dollop out the batter. Once the batter starts to bubble you can flip. About 2 minutes each side I found.

Top with homemade Pumpkin Apple Butter for a real treat! I used Upforstainthood’s recipe. Enjoy!

organic steak and eggs

Clearly the theme for all of my meals is simplicity. This is another simple recipe. I used what was in my cupboard for marinating, but feel free to add your own spices and make it your own. I also did not marinate the steak very long. If you let it marinate for a day (if you have that time) it will turn out amazing! This is clearly not vegetarian friendly, but good news for Paleo and GAPs dieters!

Ingredients:

1 large Grass-Fed Steak (cut of your choice)

1-2 tbsp Organic Extra-Virgin Olive Oil

1 tsp Organic Garlic Powder

1 tsp Organic Himalayan Salt

1 tsp Organic Black Pepper

1 tsp Organic Paprika

2-3 Eggs (I only use free-range organic)

Method:

Combine all the spices together. Rub down the steak with the olive oil then rub on the spice mixture. Seal the meat in an airtight container or eco-friendly plastic wrap and refrigerate for at least 30 minutes. After the steak has sufficiently marinated remove and prepare a pan with a little grass-fed butter, olive oil spray or coconut oil and heat to medium. Place the steak on the pan and begin mixing your eggs while the first side cooks. Flip the steak once it has been nicely browned. Once you can feel with your utensil that the steak is to your liking (see here for tips) remove from the pan. Add the eggs to the pan (don’t clean it you’ll want the steak juices for flavor). Scramble up your eggs and serve alongside your delicious steak!

organic scrambled eggs and sauerkraut

Super easy and quick. There are lots of websites showing you how to make your own sauerkraut if you choose to do so. I like the flavor it gives to basically anything you are eating. Plus it has some awesome health benefits as well, including helping lower cholesterol as well as regulating your digestive system as a natural probiotic.

Ingredients:

2-3 Organic Free-Range Eggs

1/2 tbsp Grass Fed Butter or Olive Oil

Salt and pepper to taste

2 tbsps Sauerkraut of your choice (I use organic ginger beet sauerkraut)

Method:

Super simple. Heat up butter or oil in a pan on medium heat. Add your eggs how you like, I like them scrambled and cooked firm. Then top with sauerkraut. And you’re done.

organic veggie scramble

Starting your day with lots of good fat and protein is a great way to keep you full and help regulate your metabolism. This recipe is not paleo but can be if you get rid of the chips. Corn chips are gluten free but be careful, I only use non GMO natural blue corn. Much better for you.

Ingredients:

2-3 Organic Free Range Eggs

1 Handful Organic Kale

1 Organic Bell Pepper (I used a yellow one here)

1 Organic Tomato

1/4 Organic White Onion

1 tbsp Organic Unrefined Coconut Oil

Method:

Prep all the veggies, cutting to your liking. Heat the oil in a pan on medium heat. Add the onion first. Then add the rest of the veggies and seasonings. Once they have cooked down, add your eggs. Top with Red Hot Blues or chips of your choice.

mexican breakfast scramble

I always try to keep a jar of organic salsa in my hand just in case I want to spice my food up. This dish can be paleo by eliminating the black beans.

Ingredients:

2-3 Organic Free Range Eggs

1 Organic Green Bell Pepper

1 Organic Tomato

1/2 Pound Grass Fed Ground Beef

1/4 Organic Onion

1 Cup Organic Black Beans

2 Tbsp Organic Olive Oil or Grass Fed Butter

Salt and Pepper to taste

Method:

Heat oil in large pan on medium. Add onion and sauté until almost brown. Add the beef. Cook until most pink is gone. Then add everything but the eggs. Once the peppers start to turn, add the eggs. Top with salsa. Maybe add some Red Hot Blue Chips to accompany!

all natural chicken sausage and kale breakfast scramble

I don’t eat sausage too often, but when I do I want to make sure it is nitrate free, raised properly and has minimal saturated fat. I used spicy all natural chicken sausage for this recipe, feel free to use whatever kind you like!

Ingredients:

2-3 Organic Free Range Eggs

1 All Natural Chicken Sausage

1 Cup Organic Kale (I used black kale or Lacinato)

Method:

Super easy. I don’t even bother greasing the pan with anything other than a little organic olive oil spray. Sausage tends to be oily so it will add the lubricant necessary. Add the sausage and kale and season to your liking. Once the sausage and kale are cooked nicely add your eggs and cook to your preference. Enjoy your protein rich breakfast!
